This salad has the taste of spring, but packs a serious nutritional punch. You’ll get plenty of vitamins, antioxidants, and omega-3 from this delicious salad!
1/4 cupagave nectar
2tbsfinely-chopped fresh mint
1/4 tspfreshly ground pepper
1avocado, peeled, pitted and cut into slices
1/2small cantaloupe, rind removed and cut into thin slices
1 1/2cupsstrawberries, sliced
2tsptoasted sesame seeds
salt to taste
Whisk the agave nectar, vinegar, mint, pepper and salt in a small bowl. Divide spinach among plates. Arrange alternating slices of avocado and cantaloupe in a fan on top of spinach. Top each salad with strawberries, drizzle with dressing and sprinkle with sesame seeds.
