Ingredients
- 1/4 cup agave nectar
- 2 tbs balsamic vinegar
- 2 tbs finely-chopped fresh mint
- 1/4 tsp freshly ground pepper
- 4 cups baby spinach
- 1 avocado, peeled, pitted and cut into slices
- 1/2 small cantaloupe, rind removed and cut into thin slices
- 1 1/2 cups strawberries, sliced
- 2 tsp toasted sesame seeds
- salt to taste

- Whisk the agave nectar, vinegar, mint, pepper and salt in a small bowl. Divide spinach among plates. Arrange alternating slices of avocado and cantaloupe in a fan on top of spinach. Top each salad with strawberries, drizzle with dressing and sprinkle with sesame seeds.
