- 2 apples (spiralized or diced)
- 1 teaspoon vanilla extract
- vanilla bean ice cream
- pecans (toasted)
- 1 tablespoon coconut oil
- 1/4 teaspoon cinnamon
- 1 tablespoon coconut palm sugar
- Heat coconut oil in pan. Add apples and cook until soft. Add vanilla, cinnamon and sprinkle with coconut palm sugar. Toss until well coated and serve over vanilla bean ice cream. Top with toasted pecans.
