Ingredients
- 6 cups fresh melon, mixed varieties
- 4 tbs ground chili paste
- juice and zest of 2 limes
- 4 tsp sugar
- 1 tsp sea salt
- 1/2 cup fresh mint, chopped

- Cut melon into ½-inch chunks, or use a melon baller. Combine all ingredients and let the salad sit in the refrigerator 1 hour before serving.
