Southwest Quinoa Bowl
  • 1package quinoa brown rice blend
  • 1tablespoon red onion, diced
  • 1-2tablespoons avocado, diced
  • 1/4cup black beans, rinsed and drained
  • 1tablespoon cilantro, chopped
  • 1/4cup corn
  • 2tablespoons shredded cheese
  1. Make quinoa rice blend according to package instructions. Set aside.
  2. Place 1 cup of quinoa rice blend in a bowl. Top with remaining ingredients.
