- 1 package quinoa brown rice blend
- 1 tablespoon red onion, diced
- 1-2 tablespoons avocado, diced
- 1/4 cup black beans, rinsed and drained
- 1 tablespoon cilantro, chopped
- 1/4 cup corn
- 2 tablespoons shredded cheese

- Make quinoa rice blend according to package instructions. Set aside.
