Ingredients
  • 1 cup quinoa
  • 4 scallions sliced
  • 4 basil leaves chiffonade
  • 1/2 cup corn
  • 1/2 cucumber diced
  • 1 red pepper diced
  • 1/2 pint grape tomatoes halved
  • 2 handfuls arugula
  • cracked pepper and salt

Instructions
  1. Rinse quinoa and strain. Bring quinoa and 2 cups of water to a boil. Reduce heat, place lid on top, and cook for about 15-20 minutes or until liquid has been absorbed. Set aside until cool. Once cool, toss all ingredients together with desired amount of dressing. Top with fresh cracked pepper and salt to taste.
