Ingredients
  • 1 cup quinoa
  • 4 scallions sliced
  • 4 leaves basil (chiffonade)
  • 1/2 cup frozen corn thawed
  • 1/2 cucumber diced
  • 1 red pepper diced
  • 1/2 pint grape tomatoes halved
  • 2 handfuls arugula
  • cracked pepper and salt
Servings:
Instructions
  1. Rinse quinoa and strain. Bring quinoa and 2 cups of water to a boil. Reduce heat, place lid on top, and cook for about 15-20 minutes, or until liquid has been absorbed. Set aside until cool. Once cool, toss all ingredients together with desired amount of dressing. Top with fresh cracked pepper and salt to taste.
