Ingredients
- 1 cup quinoa
- 4 scallions sliced
- 4 leaves basil (chiffonade)
- 1/2 cup frozen corn thawed
- 1/2 cucumber diced
- 1 red pepper diced
- 1/2 pint grape tomatoes halved
- 2 handfuls arugula
- cracked pepper and salt

Instructions
- Rinse quinoa and strain. Bring quinoa and 2 cups of water to a boil. Reduce heat, place lid on top, and cook for about 15-20 minutes, or until liquid has been absorbed. Set aside until cool. Once cool, toss all ingredients together with desired amount of dressing. Top with fresh cracked pepper and salt to taste.
