Salad Ingredients
- 3/4 cup chickpeas
- 1 avocado, cubed
- 1 cup grape tomatoes
- 1/2 cup pepperoncini
- 2/3 cup salami, julienned
- 2-3 bundles romaine lettuce, chopped
- 4 ounces feta cheese, cubed
- 1/2 cup Parmesan cheese, grated (optional)
Dressing Ingredients
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- 2 tablespoons red wine vinegar
- 1 teaspoon oregano
- 1 teaspoon Greek seasoning
- 1 clove garlic
- 1/4 teaspoon sea salt
Servings:
Instructions
- Add all dressing ingredients to a high-speed blender and combine until creamy and smooth. Set aside.
- Chop lettuce and add to a large bowl. Add remaining salad ingredients.
- Add dressing and toss until salad is coated. Top with grated Parmesan (optional).
