Ingredients
Salad
- 3/4 cup garbanzo beans
- 1 avocado
- 1 cup grape tomatoes
- 1/2 cup pepperoncini
- 2/3 cup salami, julienned
- 2-3 bundles of romaine
- 4 ounces feta cheese
Dressing
- 1/2 cup olive oil
- 1 tsp Dijon mustard
- 1 tsp oregano
- 1/4 tsp sea salt
- 2 tbs red wine vinegar
- 1 tsp Greek seasoning
- 1 clove garlic
- grated Parmesan cheese (optional)

Instructions
- Put all of the dressing ingredients into a high-speed blender and combine until creamy and smooth. Set aside. Chop lettuce and add it to a large bowl. Add remaining ingredients. Add dressing and toss until salad becomes well coated. Top with grated Parmesan (optional).
