Ingredients
- 1/2 head green or red cabbage, shredded (about 4 cups)
- 3 medium beets, julienned
- 1 red pepper, chopped
- 1 large apple, julienned
- 1/4 cup chopped walnuts
- 1/3 cup dried cranberries
- 2 tsp red wine vinegar
- 2 tsp lime juice
- 2 tsp Dijon mustard
- 3/4 tsp salt
- 1/2 tsp freshly ground pepper
- 3 tbs olive oil

Instructions
- In a large bowl, mix together cabbage, beets, red pepper, and apples until thoroughly combined. In a small bowl whisk together olive oil, lime juice, vinegar, mustard, salt, and pepper. Mix the dressing into the veggies; then sprinkle on some walnuts and cranberries and serve.
