Ingredients
  • 1/2 head green or red cabbage, shredded (about 4 cups)
  • 3 medium beets, julienned
  • 1 red pepper, chopped
  • 1 large apple, julienned
  • 1/4 cup chopped walnuts
  • 1/3 cup dried cranberries
  • 2 tsp red wine vinegar
  • 2 tsp lime juice
  • 2 tsp Dijon mustard
  • 3/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 3 tbs olive oil

Instructions
  1. In a large bowl, mix together cabbage, beets, red pepper, and apples until thoroughly combined. In a small bowl whisk together olive oil, lime juice, vinegar, mustard, salt, and pepper. Mix the dressing into the veggies; then sprinkle on some walnuts and cranberries and serve.
