Basil Watermelon Soup

Ingredients
  • 3pounds watermelon, peeled and seeded
  • 3/4cup buttermilk or plain yogurt
  • 2tbs fresh basil leaves, chopped
  • 3/4cup tiny watermelon balls for garnish (optional)
Instructions
  1. Working in batches, puree enough watermelon in a food processor until you have about 3 cups. Transfer to a large bowl, stir in buttermilk and basil, cover, and chill for at least 2 hours. To add texture to this smooth soup, stir in melon balls before serving.
