Artichoke and Ripe Olive Tuna Salad
  • 112 oz chunk of light tunadrained and flaked
  • 1cup canned artichoke heartschopped
  • 1/2cup chopped olives
  • 1/3cup reduced-fat mayonnaise
  • 2tsp lemon juice
  • 1 1/2tsp chopped fresh oreganoor 1/2 teaspoon dried
  1. Combine tuna, artichokes, olives, mayonnaise, lemon juice, and oregano in a medium bowl.
  2. Serve with sliced tomato on a bed of lettuce or on bread.
