Olive oil, quinoa, fresh red pepper, and Greek seasoning make this light dish the perfect meal for any occasion.
Instructions
  1. In a large skillet, add oil and heat on medium.
  2. Add chicken and lightly brown on both sides.
  3. Remove chicken and set aside.
  4. Add garlic, onions, and red pepper, and sauté until soft.
  5. Add quinoa to pan and stir.
  6. Add tomatoes, Greek seasoning, and broth to pan. Place chicken on top and cover and simmer for 20 minutes, giving a stir and flipping chicken about half way through.

  1. Drain and rinse cannellini beans and set aside. Sauté celery, onions, garlic, carrot and zucchini in olive oil for about 10 minutes. Stir in broth and tomatoes and bring to a boil. Reduce heat and simmer partially covered, for 20 minutes. Add beans, pesto, salt and pepper. Simmer for about 5-10 minutes. Ladle soup into bowls and garnish with grated parmesan cheese.

  1. Put all of the dressing ingredients into a high-speed blender and combine until creamy and smooth. Set aside. Chop lettuce and add it to a large bowl. Add remaining ingredients. Add dressing and toss until salad becomes well coated. Top with grated Parmesan (optional).
