Olive oil, quinoa, fresh red pepper, and Greek seasoning make this light dish the perfect meal for any occasion.
Instructions
  1. In a large skillet, add oil and heat on medium.
  2. Add chicken and lightly brown on both sides.
  3. Remove chicken and set aside.
  4. Add garlic, onions, and red pepper, and sauté until soft.
  5. Add quinoa to pan and stir.
  6. Add tomatoes, Greek seasoning, and broth to pan. Place chicken on top and cover and simmer for 20 minutes, giving a stir and flipping chicken about half way through.

  1. Add olive oil to pot and bring to medium heat. Add onions and garlic and sauté until soft. Add remaining ingredients and bring to a boil. Once at a boil, reduce heat to simmer and cook for about 30 minutes. Top with your favorite taco toppings such as shredded cheese, cilantro, avocado, etc.

  1. Drain and rinse cannellini beans and set aside. Sauté celery, onions, garlic, carrot and zucchini in olive oil for about 10 minutes. Stir in broth and tomatoes and bring to a boil. Reduce heat and simmer partially covered, for 20 minutes. Add beans, pesto, salt and pepper. Simmer for about 5-10 minutes. Ladle soup into bowls and garnish with grated parmesan cheese.
